Lateral osteotomies can help with narrowing the wide nose. There are attachments from the nasal bone to the nasal base or ala, called pyriform ligaments, that will be moved inward. Better yet, the ligaments can be detached from the edge of the nasal bone and the nostrils can be allowed to collapse in on one another to narrow the nostrils. An added benefit of the lateral osteotomy is that 1mm or so of dorsal height can be gained.
There are many factors that go into whether you will need lateral osteotomy to narrow your nasal bones during a rhinoplasty. If this is indicated it will not affect your airway if properly done by an experienced rhinoplasty surgeon.
For wide nasal bones that are obliquely oriented, lateral osteotomies will be successful in narrowing and improving the shape of the dorsum. In some Asian patients, the dorsum is so low, and the bones so horizontally oriented, that osteotomies will not be a great choice and recreating dorsal aesthetic lines with a dorsal graft (such as a diced cartilage fascia - DCF) is the best option.
Most Asian rhinoplasty patients do not require osteotomies but it would be nice to see your photographs. There are other maneuvers to narrow the base. You would be best served by an in person evaluation of your nose by a board certified facial plastic surgeon with expertise in Asian rhinoplasty.

It is unusual to need a lateral osteotomy with an Asian rhinoplasty. Most Asian noses look low and wide because they do not have enough dorsal height. When corrected with a dorsal augmentation suddenly the nose does not look wide any more. Of course every case is slightly different so its important to examine each individual and determine what are his or her goals with the rhinoplasty. Have an imaging device such as the Vectra 3D XT can really help the patient see how each change will look and help to plan the surgery accordingly. That way when the proper things are done the patient is more likely to be satisfied with the results.
Lateral osteotomies can be used to narrow the base of the nasal bridge and make the nose narrower if desired. The nasal base can be narrowed using Weir excisions which are frequently necessary in Asian rhinplasty.
Giving any surgeon the title of "best" Asian rhinoplasty surgeon is subjective at best. As a patient, the best thing to do is to seek out experienced Asian rhinoplasty specialists, go on ~3 in-person consultations, and choose the "best" surgeon for your nose.

A large volume of grafting material is often required in Asian rhinoplasty to raise the bridge and refine the tip. Enough septal cartilage is rarely available and rib grafting is often used. There is virtually no resorption of rib cartilage over time so it is essentially permanent.
