7 months past FUE you still have a significant amount of time left before reaching the final growth state near 12 months. It is very possible/likely that in these coming months you'll see some improvements with the transplant growth.
The final results of a hair transplant procedure will become more evident after 12 months. 7 months is far too early to judge the final results. Your hair will continue to grow and thicken during this period. Furthermore, it is recommended that you take Finasteride for maximum effectiveness. A positive regrowth rate along with a natural appearance is the most sought after result when evaluating the success of a hair transplant.
Transplanted hairs start to visibly regrow between months 4-6. At month 6-9, a patient may expect to see growth for 80% of the transplants. Again, due to the random cycle of hair growth, not all grafts will start growing at the same time. Initially, the hair my be thinner and finer. It will gain length and density as it matures. You should be seeing a majority of your transplanted hair growth by now. But you will still most likely see new hair growth continue for the next 4+ months. As the hairs do continue to grow as well you will hopefully see some good density. If you have any questions or concerns it never hurts to follow up with your hair transplant doctor.

It would be a shame that you doubt your doctor after your surgery. If you are concerned ask your doctor for your surgical records. If there are redness and you are concerned it is best to contact your doctor for a recheck.
If rubbing with shampoo+conditioner isn't working I recommend baby oil. Let it sit on your scalp for 5-10 minutes then gently rub off the scabs. It's more effective than shampoo but also harder to rinse out afterwards. Argon oil would probably be fine too. Good luck!
This is unusual. You want to make sure that the redness does not reflect an infection to you might return to see your doctor and get yourself examined.
