Yes, the areola will still change size and shape with weight gain or loss. You can also have an areolar reshaping procedure to make the areola slightly larger and more round. Depending on how much sensation you still have, this may be able to be done under local anesthesia.

Thank you for sharing your photo! You appear to have significant breast scarring and may have lost part of your areolar tissue while healing. Stretching an areolar is not possible as that tissue is gone forever. Theoretically, a tissue expander could be placed, but I have not seen that done to expand areolar tissue. However, tattoo is an excellent option. A trained tattoo artist can match your natural pigmentation, correct the nipple appearance, and even hide some of your scars. To improve the appearance, one option you can consider it medical tattooing of the areola. This can be used to minimize the appearance of scarring and to increase the size to improve the symmetry between the right and left side. This does not require any surgery or gaining weight.
I don’t believe that gaining weight would be the best way to modify your areola size. It would be much more effective to undergo a small surgical revision, under local anesthesia, of the areola by removing some of the lighter colored breast skin and then stretching the skin outward to meet the breast skin to increase the areola diameter. Discuss this with your plastic surgeon.
Areolae can be stretched surgically, but probably not much with weight gain. You could also consider cosmetic, not artistic, tattooing to fill in the missing color.
