I have been applying the ointment to the donor area now for 7 days. Should I be good to let the donor area heal by itself now without anything or do I still need to apply the ointment for a longer period of time? If so, how long?

Not every patient sheds their transplanted hair, so there's no cause for alarm there. For the hairs that did shed, typically you'll begin seeing them grow in a few more months, for some people it may take 9+ months after the transplant to see hair growth.
You will be fine. Almost any shampoo will work. I usually recommend zinc pyrithione (head and shoulders).
Bottom line: Don't panic. The hair will still grow.
