The septum is not typically reduced to shorten the nose as this can be to aggressive. Usually a cephalic trim or suturing the medial crura up to the septum can achieve this.

Septal cartilage is the best, followed by ear, and rib. Rib tends to warp and ear has little integrity. There is also fresh frozen cadaveric rib cartilage which seems to last.
