Would lipo with fat transfer and rhinoplasty 1 day apart make me prone to clots, or other risks?

You are correct in that having two general anesthetics in such close proximity this will increase your risk of VTE or venous thromboembolism. This includes blood clots in your legs, or deep vein thrombosis (DVT), and blood clots in the lungs, or pulmonary embolus (PE). While these risks are minimal from the rhinoplasty, having any type of liposuction will increase your risk of blood clots. These risk can be minimized by the use of blood thinners, but the risk will remain regardless. Make sure that the two board certified plastic surgeons that you are working with know about the other planned procedures so these and any other risks can be minimized.

I don't think there is any data from our collective experience to comment on back to back elective surgeries. If your plastic surgeons are both on aware of the sequence and timing of your cases, it's probably ok. In the world of medicine, there is plenty of experience with sequential surgery spaced out by a few hours so I would keep everyone informed and make sure everyone is comfortable. Best Wishes!!
