I'd really like to sharpen my profile but regardless of how much weight I lose (I am very skinny now) I can't seem make my face any more sculpted. I'm wondering if I would be a better candidate for liposuction around the chin and jaw or a chin implant?

The volume is deeper seated and therefore liposuction will make a difference, but probably not quite as much as you would like to achieve. The chin projection appears to be good. My impression is that your best bet for achieving the definition along the jawline and contour under the chin would be a deep plane anterior neck lift, which addresses both volume under the skin and deep to the platysma muscles.

Liposuction can only accomplish removal of the fat deposits above the plasma muscle, which will only be mildly effective. You most likely have fat deposits below the plasma muscle which must be removed with a neck lift procedure to remove the fat deposits underneath the muscle, which also includes a platysma-plasty to significantly improve the jawline.

Facial aesthetics is a fairly complex subject and simply getting quality assessment or understanding what the primary variables can be challenging. Period. Some providers do this better than others. Simplistic solutions to problems based on primary bone structure are at best going to give you partial improvements. You can consult with plastic surgeons or oral surgeons in your community to see what each has to say.
