I’m not sure exactly how long it’s been but I think it’s been a couple of weeks since I picked it off. The scab fell off on its own and the skin was just a light pink. Now it’s almost red and I can see a little brown speck that seems to be the mole growing back. How can i make it stop regrowing and clear up the pink-redskin around it? (first pic is before i picked it off, 2nd pic is maybe a week after i picked it off, last 3 is how it looks now)

It is not a good idea to treat moles with cryotherapy as it will always leave the deep elements of the mole in place; this is what you are seeing. When removing moles, it is important to remove the entire mole with an incision.
Your scars are still pink an definitely "immature" at 3 weeks. This is not the final result. It is common to get indentations after mole removal by electrodessication (or laser). You should wait 6 months before considering any intervention, such as a scar revision (minor surgery). Sometimes...
Thank you for your photos and question. That indent looks like it should smooth out as it heals! I would make sure to continue protecting it from the sun with sunscreen and reapplication.
