I got my mole removed by using cryotherapy about a week ago. It finally came off this morning and it was small and black. A few hours later I noticed the area started to cause some pain. So I reached over to touch it and now it feels like I’m growing a new mole! Is that even possible? Just hours of it falling off?

Your scars are still pink an definitely "immature" at 3 weeks. This is not the final result. It is common to get indentations after mole removal by electrodessication (or laser). You should wait 6 months before considering any intervention, such as a scar revision (minor surgery). Sometimes...
Thank you for your photos and question. That indent looks like it should smooth out as it heals! I would make sure to continue protecting it from the sun with sunscreen and reapplication.
I typically remove sutures of the face at 5 days after the procedure. You are correct that 14 days is a long time!Definitely check in with your surgeon about when he/she actually wants to see you back.
