There are a lot of things that can contribute to swelling after rhinoplasty. Increased solutes in the blood such as salt and sugar can certainly contribute to this. More importantly, if you are diabetic, it is very important to keep your sugars under control and high sugar can lead to problems with healing. The stress of surgery can cause changes in your insulin requirements and you should follow your sugar closely before and after your procedure.
