In general, it is not common for pores to be addressed surgically during a rhinoplasty although it is difficult to determine for sure without pictures. More commonly, skin concerns such as large pores are managed by dermatologists.
Reducing the size of pores is difficult. If there is a discrete large pore that is bothersome, this can often be removed and sutured back together (will leave a small scar). Some people will report that resurfacing procedures can reduce pore size (chemical peels, CO2 laser, dermabrasion, etc), however none of these provide consistent results. Shaving off pores would be ill-advised because this would likely leave a sizeable scar.
