I’ve noticed my face overal is uneven, but I notice it more with eyes and would like to start there with fixing them. However I’m not sure what surgery is available to me or what I should be looking for in terms of correcting what I have.

Canthopexy usually is not a strong procedure to cause permanent change. Canthoplasty is a stronger technique however it may not be enough. It depends on the position of the lower eyelids. If the lower eyelids are also low, they need to be raised too. Best to have consultation.
