In my opinion whey protein will not have any effects on your hair transplant even 1 day post op. You should be fine.
Should be okay just make sure it doesn't have creatine added as creatine is an oxidizer and known to damage hair follicles. Many protein supplements say "with energy boost" that is code for creatine.
