My nose splint was removed on the 7th day and for the most part the bleeding/dripping in the nose had subsided. I was off all pain meds as well. I had a few alcoholic beverages on the 8th day. Would this permanently damage the recovery at this stage?

You should not have any sort of nicotine during the healing process, for at least 4 weeks following surgery. This can cause a lot of healing delays. After having a major surgery like that you want to allow you body to heal completely and properly.
