My pre-operation appointment is scheduled a week before my breast reduction surgery because my surgeon will be out of town. I'm aware it's standard to have that appointment one or two days before surgery, so I'm getting anxious. Won't my markings fade within that week? Outside of markings, what else gets discussed/completed during that appointment? Additionally, is it standard to see the surgeon or a physician assistant for my first post-op visit?

Make your surgeon and anesthesiologist aware of this prior to surgery. Measures can be taken to prevent complications. You should have nothing to eat or drink for at least 8 hours prior to surgery.
I would agree with your PS if you want to be that small. Any pedicle approach would lead to a high risk of nipple areolar loss. I can get a similar result with a FNR and a pedicle approach so do not worry. Be aware that you will lose nipple sensitivity, nipple projection, possibly some pigment...
