If i have a porcelain veneer that needs replacement, is the doctor able to recreate the same veneer so that it will still fit with my pre-existing retainer?

If your prepless veneers make your teeth look larger, consider slight reshaping. For future procedures, request a diagnostic wax-up to preview the outcome. For a more natural look, you might need to replace the veneers with some tooth preparation involved.
It is true that dental veneers or crowns can get darkened they are worn off. However, it will take some while. Unfortunately there is no other way than to replace them if it is a big concern for you.
Most likely there is residue from the bonding cement. The back of your tooth should feel the same as prior to treatment. There will be a difference, however, in how the smooth porcelain would feel vs natural tooth structure. But, to me this sounds like you should return to the dentist to...
