Can crown be made so there’s no contact with opposing tooth?

Often times symptoms such as yours are caused by the grinding, which can be minimized by wear appliances at night time to minimize the pressure. Consider getting an occlusal guard to minimize the pressure on that tooth which help settle down the sensitivity.

It is possible to adjust the crown so you aren't biting on it. Depending on the thickness of the crown, it could create a hole if too much is adjusted. It is possible that clenching on the adjacent teeth will cause pain in the root canal tooth. Clenching and grinding can cause a lot of weird symptoms. You might consider an orthotic to manage the symptoms of clenching before you start adjusting too much.

Yes, it is possible to adjust the bite on a crown so that it doesn't touch the opposing tooth.  However, this is often temporary, as the tooth often "super erupts" until it touches the opposing tooth.  If the opposing tooth was missing, it is common for the remaining tooth to drop into the space and can cause issues.  In your situation, I would certainly try adjusting the bite and see if that helps.  I would also suggest a night guard to help in the bite force distribution while clenching.
