Can rib height with a cartilage graft be achieved through a closed rhinoplasty?

While technically possible, it is usually not recommended to have this type of rhinoplasty done closed as you are more likely to need another revision in the future since the cartilage cannot be secured as precisely as with an open approach and revision work has distorted anatomy where it is best to have the correct exposure. The incisions for open rhinoplasties can heal extremely well if that is a concern of yours
