Does stress, anxiety and antidepressants affect my new hair transplant growth?

Stress can definitely be related to hair loss but it should not have a significant impact on your surgery.  Wearing a hat is not an issue.

Congratulations on being proactive to improve your image. But remember true beauty comes from inside, outward looks is only temporary as we all will some day age, and change. Stress should not impact the new hair that is transplanted but willi impact the native hair that remains as this is subject to genetic balding which is made worse by stress
