I was talking with a plastic surgeon who typically removes the septum from the nasal spine, the vertical plate of the ethmoid and the vomer, this seemed rather invasive compared to what I had read, I'm wondering how common this is in rhinoplasty/septoplasty.

If there is a specific area that bothers you, like you mentioned your nose, then perhaps there are things that can be done to soften the appearance. Best to be seen in person.
