1 month post FUE - grafts are now shedding as expected, the concern I have is that most of the grafts that are shedding seem bent / crooked at the root which suggests to me that they were bent as they are being inserted. Does this mean that the grafts were implanted improperly? is the follicle upside down, and will it live and eventually grow? - I know I'm supposed to ask my doc, but I need other opinions since my own doc would be less likely to admit to a procedural error than a third party.

Answer: If you have issues after surgery, it is best to follow up with your doctor. Sometime they are referred to as "J" hairs.
The redness after the surgery at the donor side is common . If you feel pain or anything else than you should contact your surgeon for post op care instructions.
Usually most doctors recommend waiting about 2 weeks before freely switching to whatever shampoos/conditioners you are comfortable using. But if all your crusts are gone at this point switching a little early might be okay- ask your doctor first, since they know the details of your procedure.
