I am getting a laser gum lift and recontouring on 16th December 2014. I am scared that my teeth will be a different colour than the teeth that are currently now covered by gum. I have also been told that there is a potential that we will hit the root of the tooth, which will be a different colour and too can't be whitened.

Yes, you can do this. However, you should give yourself a chance to see how you like your new teeth before going right under the knife. Take a breather from dental work and see what you would like to change first. You may decide to do nothing. Also, you won't be able to take too much gums away...
Not sure what you mean exactly without a pic but assuming you have NOT recently had a survey, this could be a sign of a genetic anomaly to a serious disease condition. See a periodontist to assess.
