If you get fat grafting to your face and you gain weight will your face blow up?

If you add fat to your face then it will respond like fat anywhere else in your body and your face will get proportionately larger with weight gain.

If you worry about removing long-term fillers then you should also be equally concerned about the difficulty in removing previously grafted facial fat.

Fillers are more predictable and easier to work with making them more consistent and overall giving better results than fat and for that reason long lasting fillers are still a better option in my opinion.
