Using oral Minoxidil - noticed I have been having an itchy scalp from it, not too serious. I'm scratching my hair out

It’s a good question but requires an up close examination. There are dozens of reasons for an itchy scalp.

You may have developed an allergy to minoxidil or one of the ingredients that contains the drug.  Speak with your doctor or your pharmacist about trying another form of minoxidil

when you use medical hair treatment, it needs to be under the supervision of a hair loss specialist. Itchy scalp is more commonly  associated with a reaction to topical minoxidil, but with oral is rare. To find if your itchy scalp is related to oral minoxidil, you need to see a doctor.
