I'm trying to avoid implants and bridges. Is this possible? I've seen online that dentists shape the canines to match the missing later incisors. But where does the gaps go?

Your smile is very important, but your bite is even more important. Not having a proper bite can cause even more tooth and bone loss.
Clear aligners may be a good alternative for you where you dont need to have fixed metal braces for a long period of time.
Invisalign is >1mm thick tray and it apply very light force on teeth. but as u have bruxism so this tray will protect teeth by preventing further grinding.
