I am aware that getting braces will, to varying degrees, change facial structure as an effect of moving teeth around, but this is always presented as a residual--more or less unintended--effect, as in, the goal is to straighten teeth, but your profile might change as a result of that. Would it be possible to apply braces in such a way that changing my profile is as much of a goal as straightening my teeth is?

Orthodontists are specialists is moving the teeth-whether or not bite correction is involved. It looks like you are a great candidate for orthodontics. You might even be eligible for clear aligners instead of braces.
Go see an orthodontist for a consultation. There are many simple options, like an Inman aligner, that may do just what you would like. There would be a fee of some sort, but not likely as much as full braces or Invisalign.
I think you really have to fix your open bite, more due to the fact that you have an imbalance in function which may cause abnormal wear and the fact that you might get a TMJ disfunction due to the instability rather than just the esthetics. The good news for you is that Open bites are certainly...
