How can I be assured that my new crowns will look like my natural teeth and not dentures?

I am a 57 year old male. I am scheduled to have almost a full mouth restoration in October. 20 zirconia crowns (10 upper, 10 lower), almalgam fillings in remaining molars replaced with composite resin. A Digital impression with be made and to my understanding the crowns are shaped by a CAD/CAM machine. Here is my concern. How can I be assured the new crowns will look like my natural teeth and not dentures? (too straight and too white looks fake to me) Please suggest a shade for my age. TY
