Of course a while after the surgery I assume its safe to do mostly anything, but what about shortly after you get the surgery (around a week)? Is it safe to wear over ear headphones? If not, is it safe to wear ear buds instead? If the answer is still no, when would it be safe? Thanks.

Judging by the photos you sent, I think your ears now look normal.
In people who have never had surgery, they are never perfectly symmetrical.
And no-one else looks that closely.
Pixie ears are simple to fix if the surgeon knows how. The earlobe needs to be rounded out and converted to a detached earlobe. I have several examples on my Instagram of pixie ears that were corrected showing how it is done.
