I got my braces off 5 days ago but was not given a retainer can my teeth shift in a week until I get my retainer?

The time needed to make your retainer of a week, or even two, is fairly common.  If your teeth are moving noticeably a call to your doctor may be a good idea.  However minor changes are usually taken care of by your retainers as they can handle tiny movements that might have happened after your mold was taken.
