Yes it is possible to do coolsculpting behind the knees. It would depend on if an applicator can be fitted to the area of concern. Another non surgical option would be to use Kybella to dissolve the fat. This is an "off label" use of this medication. We have used it to treat knee fat on several occasions with very good results.
CoolSculpting for knee fat can be performed using several different applicators Not all offices have all the latest applicators so be sure to go to a provider that has all the applicators...called a CCP practice..CoolSculpting Complete Practice. You also need an evaluation because the bulge in the back of the knee may be a popliteal cyst and not fat. The cyst cannot be treated with CoolScullpting.
