I recently started noticing that my nostrils look completely different from the other. In the left one I can't really see straight up into it and there's more cartilage/skin and the right one I can see completely inside of it and there's way less cartlidge. Is my septum deviated? Is the tissue damaged. I never really noticed til now and it's starting to bother me

I would conjecture that most of the pain is not from the spur, but from residual inflammation in the sinus area. Fixing the septum and spur will help to avoid future sinus issues.
