I had new veneer teeth to replace the ones that broke during a bathroom accident, and for the old ones I've used, they were very durable and have been for 15 years and I have eaten whole apples with those veneer teeth with no problem. Now that I have brand new veneer teeth, how long do I have to wait until I can eat a whole apple again? Like in the matter of weeks, months, or even years?

Remember , veneers are for aesthetic improvement and not for widen arch. best option for you is arch expansion by DNA appliance or damon braces or invisalign. as u have narrow arch + large buccal corridors . after arch expansion , u can go for porcelain veneers for aesthetic improvement.
This is due to the fact that the composite overpasses the limit as far as they could reach and is starting the process of inflammation due to the invasion of the material. I suggest you visit your dentist and tell him to eliminate this excess before the disease develops in your gums.
