Skeletal open bite are very hard to correct without jaw surgery. Your case seems pretty severe and Invisalign alone will not be able to correct it. The Invisalign can certianly realign your teeth and improve the crowding while protecting your posterior teeth from the occlusal trauma. Good luck!
I agree with Dr. Waxler, Invisalign is a great product for mild and sometimes moderate dental problems. However, from your photos (and without any other information) it looks like you have a skeletal problem more than a dental problem, which would require an orthognathic surgical procedure to correct. Its possible to do surgery along with Invisalign although I don't think the predictability of your result will be as high. So to answer you question believe that without surgery Invsalign would mainly just straighten your front teeth.

As I always say: Complicated cases require expert opinions....see an orthodontist who does both braces and Invisalign to have the best chance of a getting the right treatment
There is no charge by Invisalign to transfer the case. The new dentist will have their own fees depending on much longer the case is going to take.
If the Mio Water Enhancer is colored it may change the color of your aligners - may stain them. This is true with anything you drink while wearing your aligners. If you can find a clear one that would work best. If not, you may notice discoloration in your aligners.
The guidelines for what expanded function assistants can do varies by states, but I personally don't think assistants should be doing IPR since it is irreversible.
