I have a small chin and mandible and lack jaw definition as well as cheekbone definition. Also, my nose seems too projected compared to the rest of my face. Can this be fixed with double jaw surgery?

Your images demonstrate a shorter dimension to the chin which makes the chin appear prominent. One can readily change its 3 dimensional position for improved balance if that is a goal.
You have a vertical facial growth pattern and the 'width' of the jaw is quite tapered. The ramus/back of the jaw is also short and narrow which makes the chin and face look longer. The answer is to augment the ramus, and establish a natural jawline both from the front and in profile.
