Can invisalign attachments affect the way you chew/eat?

What you are indicating is called a lingual ramp. These are used to help correct deep bites with Invisalign. One of the advantages of Invisalign is that this kind of thing can be built into the aligner, eliminating the need to add one to a tooth, which brings me to my main question: why would your doctor choose to place only one? As a general rule, to correct deep bites, the lingual ramp is placed on all the lingual surfaces of upper anterior (front) teeth. You should definitely ask your doctor as to why they did not include that into the aligners.

Speak to your dentist.  It may need to be adjusted or moved out of contact.  You should be able to eat without interference.
