I've recently got my braces out but I've noticed that my gums were still uneven before I had braces. I thought about laser gum contouring to even it out but my ortho didn't recommend it since there are some risks. He even mentioned the gums of the left centre tooth may even out over a couple of months but I don't think that's the case since there were always like that since I was little. Should I leave it as it is or go through with gum contouring?

The fastest way to get rid of that canine is to extract it. It is the most invasive option but it is also the fastest option. Your other teeth are fairly all in line so extracting the canine will not be that big of a deal for function or aesthetics.
By the photo, it does appear you have mild-moderate over-extrusion of your incisors and/or maxilla causing a gummy smile. Please consult with your orthodontist about temporary anchorage devices (TADs) to gently intrude your incisors and reduce the excessive gingival display. Cheers!
The wire behind your teeth should stay on indefinitely, it is your permanent retainer. The teeth have not moved because you have the retainer. You may have your permanent retainer checked by an orthodontist, or your general dentist when you have an exam, just to make sure that you don't have any...
