I had LASIK in April 2023, my prescription before having surgery was -3.75 in both eyes. I have requested my medical records and I can see that at my one month post-op appointment in May 2023 my prescription was +0.75 in my right eye and +0.25 in my left eye. I had an eye test last month (Feb 2024) and my prescription is now 0.00 in my right eye and -0.5 in my left eye. I am feeling quite upset that there has been such a big change in my eyesight in less than a year. Is this normal?

After surgery sometimes there might be regression of myopia, and very rarely you may need second laser operation to correct. usually night vision problems are related with myopia..
When you use your glasses, if there is any correction of strabismus, lasik surgery may help.. but lasik may not help fully correction of strabismus.. at least your glasses number would be less than before after lasik surgery
You may have minimal astigmatism remained, this may cause galre halo.. enhancement surgery may be usefull for you but you will need near glasses for future...
