Labiaplasty will not affect your hormones. Stress on the body can affect hormones. Your cycle should return to normal. You should get plenty of rest and follow all your post-op instructions. Follow up with your physician if you cycle doesn't resume in 2-3 months. 

Best option based on the provided pics would be the border trim technique.  I believe this would provide the best cosmetic appearance with the least complication rate.  The decisions are always made at the consultation with a mutual understanding about the desired result.

This can be repaired relatively easily.  You would need an office consultation to review options.
