In minor case, excess overjet (dental protrusion) can be resolved with filing between teeth to make some space. However, in more severe cases, in order to obtain noticeable improvement, extraction of premolars are often necessary. To get the best result, it is important that you communicate with your orthodontist how much improvement you would like to see. This will heavily influence if extraction will be recommended.
Invisalign can be used to treat crowding conditions. Interproximal reshaping of teeth is required to create space for alignment unless teeth are extracted to make space.
How soon the space closes will depend on how the teeth movement was designed initially. Normally you can notice space closing after several weeks. It may not completely close but it will become less noticeable.
It is true there are various opinions just like many things in life. Generally speaking it's best to remove Aligners during eating and put it back immediately after eating. However, people don't usually do that and once the aligner is out they don't put it back for at least 1-2hours. This adds up to many hours a day without Aligners. If you don't snack often and are very compliant then you should remove the Aligners to eat. If you do eat with Aligners, make sure you still remove it after eating and rinse your mouth and aligner really well to get rid of food debri. This prevents the risk of food trap and cavities.
