How fat "melting" procedures work
I assume you are talking about the noninvasive procedures. The ultrasound versions (Liposoniz, Ultrashape) are not FDA cleared so they are not available in the U.S. Published papers indicate that the cell remnants - not whole cells - are cleared by the lymphatics. Ironically, the laser system (Zerona) is FDA cleared but there is not much published to show what effects it has on fat cells. It seems more related to the diet supplements.

Fat melting procedures are mostly about marketing.

There is just no science behind all these catchy sounding names. Very very few experienced, board certified plastic surgeons who do a lot of cosmetic surgery do any of these procedures.
There are no advantages and more complications. I advise sticking with tumescent liposuction, which has a 20 year track record of safety and good results.

Fat Melting Procedures
In non-invasive procedures which claim to melt fat, the devitalized cells would have to be absorbed by the body into the blood and lymph system to be discarded. I am not aware of any long term studies on the effects of the reabsorbed fat. In minimally invasive procedures such as Smartlipo, the melted fat cells are sucked out of the body similar to traditional liposuction.

Where does the "melted" fat go
The exact mechanism for removing "melted" fat after mesotherapy or noninvasive fat removing technologies has not been clearly defined. If the procedure include liposuction, then it is removed in that way.

With meso-therapy (fat melter injections), laser or ultrasound, the fat cells are actually broken down releasing free fatty acids and triglycerides. These can be absorbed primarily by the blood stream. Concerns about elevated triglycerides have been raised but not shown to be signficant.
