I know dorsal humps occur for many reasons, but I broke my nose today and I really don't want one. I read that they can form due to a calcium deposit to fix the bones. This probably sounds really stupid, but I have two ideas: 1 - Why not just apply constant, gentle pressure to that area? 2 - As I'm already on a dairy free diet to aid my acne, why not just keep my calcium intake as low as possible? Do you think this could work? I really don't want my nose to change, and I couldn't afford surgery.

What you are asking is not either easy or practical. As most maneuvers to elevate the bridge will affect the status of the dorsal hump. To be honest, after looking at your photos I would only consider a slight rasping of the hump or simply doing nothing and leaving your nose as is.
