Many factors play into value of fat transfer to calves.

The general goal in fat transfer is to use fat deposits that are relatively diet resistant so that fluctiations in weight do not effect the results of transplanted fat. Theoretically, the fat, if it survives after transfer, should be permanent. Diet may reduce the size of the fat cell but not eliminate it. The value of the result is generally evaluated by the success and viability of the fat transfer. This varies among different individuals.
