My ears are only slightly over-projected. But the real ascetic issue with them is that one rests noticeably lower on my head. I'm wondering if a standard otoplasty or ear pinning could help with this asymmetry or if I would have to have some other type of surgery to fix this.

If one ear is protruding and big, it will appear smaller when it is pinned. A surgical reduction is then mostly unnecessary. With otoplasties today, you have the choice between the usual traditional methods and the minimally invasive stitch method.
Placing earbuds does not require manipulation of the pinna (ear itself). As long as you are gentle inserting them, you should be able to use earbuds immediately following surgery.Best, Stephanie Power MD, MSc, FRCSC
Without examining you it's difficult to be sure but unless you heard or felt a pop then I'm sure everything is fine. At this point to have a little pressure on the posterior of the ear is probably safe. If you are concerned then you should book an appointment with your surgeon to be reexamined....
