In a consultation for a rhinoplasty, I got told by the Dr.'s assistant that I would not need to get blood work done before the surgery because I am young and healthy. Is that common/normal? Should I be concerned? I am very scared of anesthesia complications and I thought that blood work would help reduce the risks.

It is best to eat and drink soft foods and liquids for the forst few days after your surgery. Do not eat or drink anything very hot or cold. Do not eat any hard or tough food- no nuts, apples, steak, etc.
I am not sure what images you have been looking at but removing the dorsum should have a minimal effect on that particular view. The exception is if the surgeon has not brought the side edges together after dorsal removal and/or has not addressed the tip cartilages to "match" the dorsal contours...
