When performing septoplasty or harvesting the area for grafting material how much cartilage is generally removed? If you take too much would that mean the danger of a perforation or collapse could increase?

If you have not had any bleeding from the nose in the last week, you can apply a spay of saline solution in each nostril, and blow one side at the time, ocluding the other side, and do it very gently. Ask your surgeon for advice.
