Any easy healthy recipes to share?

I had my tt on 4/8/11 & looking back, the best advice was to make food ahead of time and freeze it.  I also found easy recipes helped a lot in those first few weeks. It was so nice to defrost homemade chicken soup the day I came home from the hospital.   Anyone have any recipes that they can share? Here are mine: Chicken soup: Saute chopped onions in olive oil, saute until soft (about 5 min).  Add salt & pepper & chopped tomato. Saute for 1 min.  Add about 6-8 cups chicken stock & 2-4 cups water.  Bring to boil.  Add chopped carrots & celery & simmer for 20 minutes.  Add green beans & parsley & cook for 8 minutes.  Add chicken (I use the rotisserie chickens that are already cooked).  You can add pasta.  This can be frozen.  It is so good! Breaded chicken: Soak boneless chicken breasts (cut into strips) in milk for 15 min.  Remove & add to baggie with breadcrumbs.  Shake & remove.  Put on foil lined baking sheet that has been greased with a bit of olive oil.  Bake at 500 for 10 - 14 min - until crispy.  You can serve with mustard or ranch dressing.  You can freeze these & also add tomato sauce & mozzerella & serve as chicken parm. Salmon with pesto & sliced almonds: Put salmon onto a foil lined baking sheet.  Top with pesto & sliced almonds (or pistachios).  Bake at 350 for 25 - 30 minutes until flaky.  This is really good!!  This recipe is good for when you are recovering & want to make something easy & healthy.

Thank you! I was eating dinner the other night & have been making such easy & delicious recipes lately & it reminded me of when I was preparing for & recovering from my surgery & how nice it was to have those recipes!

I have a good one....

Chili
1 lb ground turkey or beef
1 box Pom diced tomato
1 can Tomato Puree
1/2 cup diced celery
1 pkg of sliced mushrooms
1/2 cup each diced onions, red and yellow peppers (to make it easy I use 1 pkg Trader Joes frozen peppers and onions)
2 tsp cumin
2 tsp chinese 5 spice
1/2 tbsp diced garlic
1 tsp ginger
cayenne pepper to taste
1 tbsp lime juice

Sautee all veggies then add tomato products all in a stock pot bring to boil...then lower heat to simmer
in separate pan sauté meat until browned
Add meat to veggies and all spices except lime.
Stir together and simmer about 20-30 mins stirring occasionally.
Serve with tortilla chilps, or rice.

Oops... add lime into pot and stir prior to serving!
